Question: What are good hobbies for kids from ages 8-11?

I would suggest reading. If they are more active then maybe some kind of team or individual sport. Any organized team sport if they're interested or a more individual one like swimming. Collecting something that's small and cheap would be a good activity too. If the parents have hobbies the kids could join in under their mom's or dad's supervision.

Start reading books with series or watch Bleach every Saturday, late at night on cartoon network. reading books are boring to me, so, maybe, become a clean freak, or walk around and collect money and go to the movies with your friends every week ( If you can ) ... make neckless or you can sing....
